The objective of this research is to analyze the needs of customers in the reopening of the restaurant sector after the sanitary emergency caused by COVID-19 in the state of Puebla. Among the main results, it is highlighted that customers want restaurants to have adequate cleaning and disinfection of common areas, sanitizing mats, distance between tables, mandatory use of mouth covers, masks and antibacterial gel, food safety, as well as trained personnel for the "new normality". There is also a significant growth in the request for takeaway food, telephone orders or through mobile applications, 64% of the surveyed population will continue to acquire food under these modalities, so that, meet this type of service will be important for this sector.
